WINEMAKER NOTES: Our 2013 Dolcetto grapes came in from California with high sugar and low acid, while our Dolcetto from Washington came in with high acid and moderate sugars. The two were made for each other and the final blend was a perfect representation of what Dolcetto is meant to be. This is one of those situations where we realize how lucky we are that we can source grapes from both Washington and California. Not wanting to overwhelm the bright, juicy fruit we went light on new oak choosing to age a small portion in new Kentucky American barrels for notes of sweet caramel while aging the rest in neutral and 1 year Pennsylvania American to keep the tannins soft and food friendly.
